You're probably already taking precautions against food-borne illness at home, but you need to be careful when you are away from home too. When selecting foods that are ready to eat at a restaurant, delicatessen, take-out counter, or grocery store. Foods from animals such as meat, poultry, shellfish, and eggs when eaten raw or undercooked sometimes contain harmful viruses and bacteria that can pose a risk of food-borne illness. Young children, pregnant women, older adults and those with compromised immune systems are particularly vulnerable. You are at increased risk if you suffer from liver disease or alcoholism, if you have decreased stomach acidity (due to gastric surgery or the use of antacids), or if you have a compromised immune system due to : steroid use, conditions such as AIDS, cancer, or diabetes, or treatments such as chemotherapy.
To reduce your chances of food-borne illness you should stay away from:
Raw Fish or Shellfish - Oysters, Clams, Sushi, Sashimi, Ceviche. Meat or seafood ordered undercooked such as "rare" Hamburger, Beef, Lamb, Pork or Fish. Eggs ordered undercooked and food with uncooked egg ingredients -- such as " runny " fried or poached eggs, dressings or sauces such hollandaise sauce, homemade mayonnaise, and Caesar salad dressing, desserts like chocolate mousse, meringue pie and tiramisu.

Chef Huie Martin Sr.
Meet the man responsible for all the great food, carvings and creative food display, Chef Huie. For many years he has been thrilling lots of people with delicious meals and his artistic skills. People have traveled to where-ever he worked to see his artistic works, cooking demonstrations and taste his fine cooking. Now here is a inside look at who he really is.
Chef Huie was born on the island of Jamaica where he learned authentic Caribbean cuisine. He also learned International and North American style cuisines, training with some of the best chefs at some of the island's top resorts. In nineteen ninety one (1991) he came to the United States and joined the cruise ship industry. He has worked aboard six (6) different cruise ships for three (3) cruise lines over eight years until the year two thousand (2000). He has gained valuable worldly experiences over the many years, working with over forty different nationalities and some of the finest chefs in the world. He is responsible for some of the most delicious meals and elegant food displays for which the cruise lines are well known. He also gained experiences working as a civilian with the United States military, in a support Field Hospital kitchen. He has received certificates of achievement from the military and the United Nation for his dedication and personal sacrifice. He has worked at eight (8) different Hotels during his career, four (4) of which are located in the Cocoa Beach area. Always seeking ways to impress others with his culinary skills and tasty treats he started catering to parties and other small functions and cooking in peoples' home and that's how HIBISCUS CATERING SERVICE was born. Chef Huie is a graduate of Stratford Career Institute, an accredited training institution, he has earned a Diploma in Cooking and Catering which he as studied extensively. He is a Certified Food Safety Manager, with certification from the National Restaurant Association Educational Foundation, which is accredited by the American National Standards Institute (ANSI) Conference of Food Protection (CFP) and is recognized by the State of Florida. Chef Huie is a licensed Personal Chef and has been delighting people in there homes and at events in and around Brevard county for over five years. He has done cooking demonstration at public school and has been featured in the local news paper. Chef Huie takes great pride in the job that he has grown to love so much. He is not a chef that just went to school get a diploma or degree and started cooking. Coming out of the "Trenches" back in Jamaica where his career began he has worked his way up, working at some very small under equipped restaurants. However with guts and determination he has moved on to some of the finest resorts where he received formal training. Chef Huie found is way to the United States and joined the cruise ship industry where he was employed for eight years. Today he prides himself having worked his way from small under equipped restaurants to some of the most advanced and equipped luxury cruise liners and Hotels the hospitality industry has to offer. With a wealth of experience of over twenty years chef Huie felt it was time to put the "icing on the cake" he enrolled in a culinary program with Stratford Career Institute studying cooking and catering. Chef Huie has since graduated with "highest honors" and a diploma in cooking and catering. It is with this back ground and lots confidence that Chef Huie formed Hibiscus Catering Service, bringing to your homes and events his elegance, years of experience and a passion for the job.
